Ingredients:

6 anchovy fillets, finely chopped

100g breadcrumbs, toasted

Salt and black pepper to taste
Instructions:

Bring a large pot of salted water to a boil. Add the wild fennel and blanch for about 2-3 minutes. Remove with a slotted spoon, chop finely, and set aside. Keep the water for cooking the pasta.

In a large pan, heat the olive oil over medium heat. Add the garlic and anchovies, stirring until the anchovies dissolve.

Add the wild fennel, fresh bay leaves, raisins, pine nuts, and red pepper flakes. Cook for about 5 minutes until the flavors blend.

Meanwhile, cook the pasta in the reserved fennel-infused water until al dente. Drain and reserve some cooking water.

Toss the pasta into the pan with the fennel mixture, adding a little pasta water if needed to create a silky sauce. Remove the bay leaves before serving.

Sprinkle with toasted breadcrumbs for extra texture and serve immediately.
