Sicilian cuisine embraces fresh, simple ingredients that bring out bold and vibrant flavors. This rosemary and lemon chicken is a perfect example, using hand-picked Sicilian rosemary and zesty lemons to create a dish that is both aromatic and delicious.
Ingredients:
-
4 bone-in, skin-on chicken thighs
-
2 tbsp extra virgin olive oil
-
3 cloves garlic, minced
-
2 tbsp fresh Sicilian rosemary, chopped
-
Zest and juice of 1 large Sicilian lemon
-
1 tsp sea salt
-
½ tsp black pepper
-
½ tsp red pepper flakes (optional)
-
100ml dry white wine
-
1 tbsp honey (optional, for a subtle sweetness)
Instructions:
-
Preheat the oven to 200°C (400°F).
-
In a large bowl, mix olive oil, garlic, rosemary, lemon zest, lemon juice, salt, black pepper, and red pepper flakes.
-
Add the chicken thighs and coat them thoroughly in the marinade. Let them marinate for at least 30 minutes (or overnight for deeper flavor).
-
Heat a large ovenproof skillet over medium-high heat. Sear the chicken skin-side down for 4-5 minutes until golden brown.
-
Flip the chicken, pour in the white wine, and drizzle with honey if using.
-
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through (internal temperature of 75°C / 165°F).
-
Let the chicken rest for 5 minutes before serving.
-
Serve with roasted potatoes or a fresh Sicilian salad for a complete meal.
Why These Ingredients?
