  • 4 bone-in, skin-on chicken thighs

  • 2 tbsp extra virgin olive oil

  • 3 cloves garlic, minced

  • 2 tbsp fresh Sicilian rosemary, chopped

  • Zest and juice of 1 large Sicilian lemon

  • 1 tsp sea salt

  • ½ tsp black pepper

  • ½ tsp red pepper flakes (optional)

  • 100ml dry white wine

  • 1 tbsp honey (optional, for a subtle sweetness)

Instructions:

  1. Preheat the oven to 200°C (400°F).

  2. In a large bowl, mix olive oil, garlic, rosemary, lemon zest, lemon juice, salt, black pepper, and red pepper flakes.

  3. Add the chicken thighs and coat them thoroughly in the marinade. Let them marinate for at least 30 minutes (or overnight for deeper flavor).

  4. Heat a large ovenproof skillet over medium-high heat. Sear the chicken skin-side down for 4-5 minutes until golden brown.

  5. Flip the chicken, pour in the white wine, and drizzle with honey if using.

  6. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through (internal temperature of 75°C / 165°F).

  7. Let the chicken rest for 5 minutes before serving.

  8. Serve with roasted potatoes or a fresh Sicilian salad for a complete meal.
